Artisanal Minangkabau Culinary Experience Press Conference

Maharasa Indonesia, a collaborative project between talented Indonesian chefs, food curators and renowned gourmands will hold "Artisanal Minangkabau Culinary Experience" event on 21 to 23 June 2013 at Akili Museum of Art, located in the area of Kedoya, West Jakarta.

This event is a gala dinner where secrets behind the culinary traditions of the Minang people will be revealed such as the artisanal raw ingredients, processing techniques and playback of several video clips related to the specific ingredient. An inspiring cultural narrative will accompany the presentation of 17 types of Minangkabau dishes, cooked to an international standard. Hence, the dinner will last for about 4 to 5 hours. The chefs behind the scene are Chef Ragil Imam Wibowo and Chef Adzan Tri Budiman. The evocative narrative will be delivered directly by Lisa Virgiano and Helianti Hilman.

Jus mentimun 
Grated cucumber and a dash of tamarind juice sweetened by artisanal arenga palm sugar from Situjuah, Payakumbuh

Teh Kayoe Aroe
Kayoe Aroe tea with egg foam and pandan dust, grilled banana, coconut cake served with grated coconut and egg coconut custard.

Balado belut sawah asap
Smoked free range eels with ground shallot, red chilies, and tomato.

Kerupuk ketan dengan suwiran ayam pop ala Bukit Tinggi
Home made sticky rice crackers served with braised free range chicken in coconut water, Indonesian bay leaves, lemongrass, and galangal.

Emping melinjo Pariaman dengan Rendang Runtiah
Pariaman melinjo bean crackers with shredded beef stew in caramelized red curry.

Soto rempah Padang 
Beef consommé with white cardamom, cinnamon, pepper served with crispy local beef loin, potato dumpling and special home made beet rice crackers.
